After holidays such as Thanksgiving or Christmas we always have a lot of leftovers. I’ve gotten creative in the last few years about making new dishes from leftovers. Here is simple, healthy, quick meal that I love. Perfect for a cold, rainy day.

Ingredients:

  • 1 butternut squash, peeled and cubed
    (I would suggest buying it already pre-cut because it’s tough to cut into. You can also wrap a damp paper towel around the whole squash and microwave for 4-5 minutes. This will soften the squash enough to cut, but will not fully cook it.)
  • ½ cup diced onion
  • 1 tbsp. minced garlic
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 4-5 cups vegetable stock

Instructions:

Put vegetable stock in pot, turn on medium-high heat and add all ingredients. Simmer for 15 minutes and cool for 15 minutes. Puree in blender or food processor.

Croutons:

  • 1 cup left over stuffing
  • 2 tbsp. olive oil

Instructions:

  • Heat skillet with olive oil on medium-high heat. Crumble stuffing and fry in oil until crispy, 3-5 minutes.

Serve with grilled cheese turkey sandwiches and sliced pears.
